Ingredients:
- 2 cups cauliflower rice
- 1 avocado, sliced
- 1 cucumber, julienned
- 1 carrot, julienned
- 1/4 cup mayonnaise
- 2 tablespoons soy sauce or tamari
- 1 tablespoon sesame oil
- 1 tablespoon rice vinegar
- 1 teaspoon sriracha optional
- 2 tablespoons sesame seeds, for garnish
- 1 green onion, thinly sliced, for garnish
Instructions:
In a small bowl, mix mayonnaise, soy sauce, sesame oil, rice vinegar, and sriracha if using
Set aside
In a large bowl, combine cauliflower rice, avocado, cucumber, and carrot
